Zucchini Egg Stir Fry

Need an excuse to add vegetables onto your daily meals? Try this delicious and super quick zucchini egg stir fry that will definitely satisfy any palate.

Ingredients

Zucchini, thinly sliced 3 pcs

Onion sliced / পেঁয়াজ কাটা 1/2 cup

Garlic sliced / রসুন কাটা 3 cloves

Turmeric powder /হলুদ গুঁড়া 1/2 tsp

Salt to taste / স্বাদ অনুযায়ী লবণ

Egg / ডিম 1

Green chilli / কাঁচা মরিচ 4-5 pcs

Roasted cumin powder / ভাজা জিরা গুঁড়া 1/2 tsp

Directions

• In a large deep skillet, heat 2 tbsp of oil over medium-high heat

• Add sliced onions and saute for couple minutes, until it's translucent

• Add sliced zucchini and stir well so it gets completely coated with oil. Add turmeric powder, salt to taste.

• Mix well, cover and continue to cook over low-medium heat until the zucchini softens, frequently stirring.

• Break an egg over the zucchini. Let the eggs cook for couple minutes, stir and mix everything

• Add green chilli and roasted cumin powder. Stir and cook for 1-2 minutes.

Remove from heat and serve with steaming rice.
