Chicken Handi is a perfect alternative to your go-to chicken curry recipes.
Ingredients:
700 gm boneless chicken thigh
1 tbsp cooking oil
½ tsp salt
½ tsp garlic paste
½ tsp ginger paste
¼ tsp red chili
¼ tsp turmeric
½ tsp pepper
2 tbsp plain yogurt
1 cup onion
½ tsp garlic paste
½ tsp ginger paste
½ tsp red chili
½ tsp turmeric
1 tsp coriander
½ tsp garam masala
1 tbsp tomato paste
1 green chili
½ tsp salt
¾ cup hot water
2 ½ tbsp cream
½ tsp kasuri methi
½ tsp roasted cumin
Instructions:
1. Cut up the boneless chicken thighs and coat it with cooking oil
2. Marinate the chicken pieces for 15 minutes with salt to taste, garlic paste, ginger paste, red chili, turmeric, pepper, and plain yogurt
3. Fry the chicken pieces on a pan for 1 minute and 30 seconds on each side
4. Remove the chicken pieces and toss in sliced onions
5. Saute the sliced onions until brown
6. Stir in garlic and ginger paste
7. Pour a splash of water
8. Add red chili, turmeric, coriander, and garam masala
9. Saute for 2 to 3 minutes
10. Pour a splash of water as needed
11. Stir in tomato paste, chopped green chili, and salt to taste
12. Pour in hot water
13. Add the chicken pieces back into the pan
14. Mix in cream
15. Finish off with kasuri methi and roasted cumin
16. Ready to enjoy!
