Ingredients:
For the Meat:
454g ground meat (beef, chicken, or turkey)
1 tsp chopped garlic cloves
½ tsp salt
⅛ tsp black pepper
1 tsp red chili powder
½ tsp coriander powder
½ tsp roasted cumin powder
¼ tsp oregano
For the Spiced Oil:
1 tsp cooking oil
2 small cinnamon sticks
2 cloves
1 bay leaf
½ tsp cumin seeds
For the Cheese Sauce:
1½ tbsp unsalted butter
1½ tbsp all-purpose flour (maida)
1½ cups warm milk
1 cup cheddar cheese
1 tbsp hot sauce
2-3 tbsp Parmesan cheese
salt & pepper to taste
Toppings:
4-6 cups tortilla chips
Chopped onion
Chopped tomato
Thinly sliced jalapeño chili
Fresh coriander
Sour cream or plain yogurt
Instructions:
Prepare the Meat: In a bowl, mix together all the meat ingredients until well combined.
Spice the Oil: Heat 1 tsp of cooking oil in a cast-iron or non-stick pan. Add cinnamon sticks, cloves, bay leaf, and cumin seeds. Sauté for 30-40 seconds until fragrant.
Cook the Meat: Add the meat mixture to the pan and cook for 7-8 minutes, breaking it up and stirring occasionally. Cook until the meat is done and crisped, and the fat is rendered. Turn off the heat and add ½ tsp of lime juice.
Make the Cheese Sauce: In a separate saucepan, melt the butter and add the flour. Cook for 2-3 minutes until the flour changes color.
