Khasta kachori is a perfect appetizer before a meal or an evening snack with a cup of cha
Ingredients:
1 tbsp coriander
1 tbsp fennel seeds
1 tsp chili flakes
¾ tsp black salt
1 tsp cooking
¼ cup gram flour
1 tsp ginger
2 large, boiled potato
¼ tsp garam masala
¾ tsp salt
2 green chilies
3 tbsp fresh coriander
½ tsp amchur powder
2 cups ap flour
½ tsp salt
¼ tsp kalojeera
¼ cup cooking oil
¾ cup water
Instructions:
1. Grind the following, coriander, fennel seeds, chili flakes, and black salt
2. Toast the spices for 1 to 2 minutes on a pan with cooking oil until fragrant
3. Stir in gram flour
4. Add finely chopped ginger
5. Mix in mashed potato, garam masala, salt, amchur powder, green chilies, and fresh coriander
6. Remove potato mixture from heat and let it cool
7. Mix the following dry ingredients, ap flour, salt, and kalojeera
8. Pour in cooking oil
9. Knead a soft dough
10. Coat the dough with cooking oil and set aside
11. Form round balls out of the potato mixture and dough
12. Roll out the dough and wrap the potato ball and seal
13. Flatten out the ball and cook in oil on low heat for 8 to 10 minutes
14. Serve warm with a side of desired dip
