Teler Pitha / Malpua Pitha


A tasty and delicious rice cake that is also a popular roadside winter food in Bangladesh.


Ingredients

Rice flour 1 cup

Whote wheat flour 1/2 cup

Grated narkel 1/4 cup

Jaggery/Gur 125 gram

Salt to taste

Lukewarm water 3/4cup


Directions

Melt Jaggery (Gur) :

  • Add 1/2 cup water to jaggery, heat it in microwave for 1-2 mins. Strain the melted jaggery to remove the dirt.

Dough:

  • In a bowl, add whole wheat flour, rice flour, grated narkel, melted jaggery (gur), salt to taste, lukewarm water. Mix all ingredients well and keep aside for 30 mins.

  • Heat oil in a pan at medium heat. When the oil is hot, pour a spoonful of batter in the oil, allow it to rise and puff up.

  • Deep fry the pitha in hot oil, flip it to cook on both sides.

  • Remove and drain excess oil in a paper towel.

Note:

Using whole wheat flour (atta) instead of white flour (moida) brings softness to the pitha.
