A tasty and delicious rice cake that is also a popular roadside winter food in Bangladesh.
Ingredients
Rice flour 1 cup
Whote wheat flour 1/2 cup
Grated narkel 1/4 cup
Jaggery/Gur 125 gram
Salt to taste
Lukewarm water 3/4cup
Directions
Melt Jaggery (Gur) :
Add 1/2 cup water to jaggery, heat it in microwave for 1-2 mins. Strain the melted jaggery to remove the dirt.
Dough:
In a bowl, add whole wheat flour, rice flour, grated narkel, melted jaggery (gur), salt to taste, lukewarm water. Mix all ingredients well and keep aside for 30 mins.
Heat oil in a pan at medium heat. When the oil is hot, pour a spoonful of batter in the oil, allow it to rise and puff up.
Deep fry the pitha in hot oil, flip it to cook on both sides.
Remove and drain excess oil in a paper towel.

Note:
Using whole wheat flour (atta) instead of white flour (moida) brings softness to the pitha.
