A simple dal recipe that packs a big punch, and one that our family devours
Ingredients:
4 medium boiled potatoes
1 tsp coriander
1 tsp cumin
1 tsp red chili
½ tsp turmeric
1 ½ tsp salt
5 ½ cups water
1 bay leaf
1 tbsp cooking oil
3 eggs
2 tbsp cooking oil
1 tsp panch phoron
6-7 garlic
½ cup sliced onion
4-5 green chilies
2 dry red chilies
½ tsp roasted cumin
3 tbsp fresh coriander
Instructions:
1. Mash the boiled potatoes
2. Add coriander, cumin, red chili, and turmeric
3. Salt to taste
4. Pour water and mix well
5. Transfer the potato puree to a large pot
6. Add a bay leaf
7. Simmer for 15-20 minutes on medium heat
8. Stir continuously
9. In a separate pan, drizzle cooking oil and add whisked egg
10. Salt to taste
11. Remove the egg from the pan once fried
12. Drizzle cooking oil in pan
13. Fry panch phoron, garlic, and sliced onion
14. Stir in fresh green chilies and dry red chilies
15. Saute until onions are brown
16. Transfer the sauteed onions and spices to the pot with aloo
17. Add the fried eggs
18. Sprinkle roasted cumin
19. Garnish with fresh coriander
20. Ready to enjoy!
