Ingredients
Chicken Breast - 1.5 lbs
Coriander Leaves ½ cup
Mint Leaves ½ cup
Green Chilli 2-3 pcs
Lime Juice 1 tbsp
Ginger Paste 1 tsp
Garlic Paste 1 tsp
Drained Plain Yogurt ½ cup
Milk Powder ¼ cup
Sugar ½ tsp ( Optional )
Salt to taste
Instructions
Clean and pat dry the chicken breast using a paper towel
Cut the chicken breasts in bite-sized cubes. Place them in a mixing bowl.
In a food processor add coriander leaves, mint leaves, green chilli, lime juice and salt to taste.
Make a smooth paste and pour it over the chicken cubes. Add ginger paste, garlic paste, drained plain yogurt/ hung curd, milk powder, sugar (optional) and salt to taste.
Cover and leave to marinate for couple hours. The longer they marinate, the softer and tender the meat turns out.
Add 1 tsp of oil and give everything a mix.
Gently place the meat onto the skewers.
Heat a non-stick frying pan /grill pan over medium high heat, add 1 tbsp of butter. Once the butter melts, add the skewers and cook them for 15 mins on each side until they brown.
Reduce the flame to low and continue to cook while you prepare the charcoal.
Heat charcoal on stove untill it turns red at the edges and a layer of white ash forms. Place the glowing coal in a small metallic dish and place on the frying pan. Drop 1 tsp of ghee on the coal and cover the frying pan with the lid. Set aside to smoke for about 5 minutes.
Serve hot with accompaniments of your choice. Enjoy! :)
