Ingredients:
Eggs: 2
Onion: 2 tbsp, thinly sliced
Salt: ¼ tsp, to taste
Green chili: 1, chopped
Coriander: 3 tbsp, chopped (divided)
Chaat masala: ¼ tsp
All-purpose flour (maida): ½ cup
Rice flour: 2 tbsp
Turmeric: ¼ tsp
Red chili powder: ¼ tsp
Chili flakes: ¼ tsp
Garlic paste: ¼ tsp
Ginger paste: ¼ tsp
Water: ¾ cup (adjust as needed)
Oil: for frying
Instructions:
Prepare the Omelette:
In a mixing bowl, crack 2 eggs and beat them well.
Add 2 tbsp sliced onion, ¼ tsp salt, 1 chopped green chili, 1½ tbsp chopped coriander, and ¼ tsp chaat masala to the beaten eggs.
Mix everything thoroughly.
Heat a non-stick pan over medium heat and pour in the egg mixture. Cook like an omelette until set and lightly golden on both sides.
Transfer the omelette to a cutting board and cut it into small squares.
Make the Batter:
In a separate bowl, combine ½ cup all-purpose flour, 2 tbsp rice flour, ¼ tsp salt, ¼ tsp turmeric, ¼ tsp red chili powder, ¼ tsp chili flakes, ¼ tsp garlic paste, and ¼ tsp ginger paste.

Frying:
Stir in the remaining 1½ tbsp of chopped coriander into the batter.
Heat oil in a pan over medium-high heat.
