Ingredients:
Eggs: 2
Onion: 2 tbsp, thinly sliced
Salt: ¼ tsp, to taste
Green chili: 1, chopped
Coriander: 3 tbsp, chopped (divided)
Chaat masala: ¼ tsp
All-purpose flour (maida): ½ cup
Rice flour: 2 tbsp
Turmeric: ¼ tsp
Red chili powder: ¼ tsp
Chili flakes: ¼ tsp
Garlic paste: ¼ tsp
Ginger paste: ¼ tsp
Water: ¾ cup (adjust as needed)
Oil: for frying
Instructions:
Prepare the Omelette:
In a mixing bowl, crack 2 eggs and beat them well.
Add 2 tbsp sliced onion, ¼ tsp salt, 1 chopped green chili, 1½ tbsp chopped coriander, and ¼ tsp chaat masala to the beaten eggs.
Mix everything thoroughly.
Heat a non-stick pan over medium heat and pour in the egg mixture. Cook like an omelette until set and lightly golden on both sides.
Transfer the omelette to a cutting board and cut it into small squares.
Make the Batter:
In a separate bowl, combine ½ cup all-purpose flour, 2 tbsp rice flour, ¼ tsp salt, ¼ tsp turmeric, ¼ tsp red chili powder, ¼ tsp chili flakes, ¼ tsp garlic paste, and ¼ tsp ginger paste.
Gradually add about ¾ cup of water to the dry ingredients, stirring continuously to form a smooth batter. Adjust the water to ensure the batter is neither too runny nor too thick.
Frying:
Stir in the remaining 1½ tbsp of chopped coriander into the batter.
Heat oil in a pan over medium-high heat.
Dip each egg square into the batter, making sure it’s well-coated.
Fry the battered egg squares for 4-5 minutes, turning occasionally, until they are golden and crispy.
Serve:
Drain the egg snack squares on paper towels to remove excess oil.
Serve hot and crispy as is or with your favorite dipping sauce.
This recipe combines the fluffy texture of eggs with the crunch of a spiced batter, making it a delightful snack for any tea time! Enjoy!
