Puli Pitha / Coconut Stuffed Pitha


Puli pitha is one of our favorite desserts of all time. Super easy and quick to make, the results are pretty stunning and not to mention the deliciousness of a crisp pitha that adds to the mix!


Ingredients

All purpose flour 1 cup

Salt to taste

Oil 2 tbsp

Water 1/4 cup

Grated coconut, unsweetened 1 cup

Jaggery (Gur) 1/2 cup

Cinnamon 1 stick

Cardamom 3 pcs

Milk 1/4 cup


Directions

Filling:

  • Heat 1 tbsp of oil in a deep skillet over medium heat, add shredded unsweetened coconut. jaggery (gur), cardamom and cinnamon stick. Stir and mix everything well.

  • Add milk to the mixture, stir continuously until the mixture is semi sticky but not runny.

  • Remove from heat and set aside for it to cool down.

Dough:

  • In a bowl, add all purpose flour and salt to taste. Add oil and mix it together with the flour to form a grainy texture. Add water in little amounts, mixing all the ingredients together to make a firm, soft and non sticky dough. Cover with towel, rest for 10-15 mins.

  • After resting, knead dough for couple minutes.

  • Divide dough into smaller equal portions

  • Take one portion, flatten it with your palm and roll it out into a circle.

  • Place a small amount of gur-coconut filling onto each circle.

  • Twist the edges (as shown in the video) and seal tightly to form a crescent (semi-circular) shape. Repeat the same for all portions.

Heat oil enough to deep fry the pitha. Fry the coconut pitha in medium heat until the dough is cooked thoroughly and slightly golden on both sides. Remove and drain excess oil.

Serve warm or at room temperature. Enjoy!
