My picky four-year-old ate 2 of them and still wanted more! An unconventional cheesy twist to fluffy buttery pancakes drenched in Canadian maple syrup
Ingredients:
2 cups elbow macaroni
1 cup ap flour
2 tbsp rice flour
1 ¾ tsp baking powder
2 tbsp sugar
½ tsp salt
2 ½ tbsp cooking oil
1 cup + 1 tbsp milk
1 large egg
1/3 cup macaroni
2 tbsp mozzarella
Instructions:
1. Cook elbow macaroni in boiling water for 10-12 minutes
2. Strain out the water and let the macaroni cool down
3. Prepare pancake batter by mixing ap flour with rice flour, baking powder, sugar, and salt
4. Mix in cooking oil, milk, and egg
5. Coat a pan with cooking oil
6. Scoop pancake batter and pour it into the pan
7. Layer it with macaroni and mozzarella cheese and flip to cook
8. Remove from heat once the pancake is light golden brown
9. Serve with butter and maple syrup
10. Ready to enjoy!
