Fresh green vegetables sauted together in a host of savory spices. You can't go wrong with a great mixed vegetable dish served best with roti or paratha.
Ingredients
Oil 2 tbsp
Bay leaf 1 pc
Dry red chilli 2 pcs
Paanch phoron 1 tsp
Onions 1 cup sliced
Red chilli powder 1/2 tsp
Turmeric powder 1/2 tsp
Coriander powder 1/2 tsp
Cumin powder 1/2 tsp
Garlic minced 1 tsp
Ginger minced 1 tsp
Bori / Dried lentil dumpling 50 g
Carrot 100g
Eggplant 100g
Green papaya 250g
Green beans
Drumstick 50g
Potato 250g
Bittermelon 100g
Pumpkin 250g
Saoked Masoor Lentil 1/4 cup
Green chilli 4 pcs
Coriander leaves (1/4 cup)
Ghee 1 tsp (optional)
Cooking Directions
Heat 2 tbsp of oil in a pan, fry bori (dried lentil dumpling) and bitter melon pieces for couple minutes. This helps reduce the bitterness, add a pinch of salt while frying. Remove from pan and set aside.
In the same pan add 2 tbsp of oil over medium heat, add bay leaf, dry red chilli, paanch phoron and sliced onions. Sauté until the onions are translucent.
Add red chilli powder, turmeric powder, coriander powder, cumin powder, minced garlic and ginger. Sauté for couple minutes, add water as required.
Add potatoes, green papaya and carrot, stir and mix everything together. Add salt and 1/4 cup water (enough to boil the vegetables). Close lid and simmer for 5 minutes.
Add pumpkin, drumsticks, eggplant and soaked red lentils. Add 2.5 cup water and simmer for 10-15 mins under closed lid.
Add fried bori/ dried lentil dumpling and bitter melon, add green chilli and coriander leaves.
Add 1 tsp of ghee (optional).
