Ingredients
Whole Milk powder 1 cup
Baking powder 1 tsp
Semolina 3 tbsp
White flour 2 tbsp
Ghee 1 tbsp
Channa/Ricotta cheese 1 cup
Bread 1 pc
Sugar syrup
Sugar 2 cups
Water 3 cups
Cardamom 3-4 pcs
Directions
In a skillet, add 4 cups of water, 3 cups of sugar and 3-4 pcs of cardamoms. Bring the syrup to a boil and turn off heat, keep it aside.
Mix white flour, milk powder, semolina, baking powder, ghee in a plate. Mix all ingredients together uniformly. Soak 1 bread in 1/4 cup milk and add it to the mixture. Add channa/ ricotta cheese and begin to bring everything together to make a dough. The dough will have a sticky texture but not soggy. Grease your fingers with some ghee and make small equal sized balls.
Fry the balls in hot oil, the oil must be medium hot, not too hot as it may not cook inside. To check the right temperature of the oil, drop a small ball and check if it floats up and does not burn quickly. Fry all balls until they turn brown on all sides. Drain excess oil in a paper towel.
Make sure the sugar syrup is hot before adding the fried balls. Soak the fried balls in syrup, under closed lid, for 10 mins at low flame. Turn off heat and let it sit in syrup for another 20 minutes. Refrigerate and serve cold!
You can add mawa/khoya as topping over the gulab jamun!
Mawa recipe
Whole milk powder 4 tbsp
Ghee 1 tsp
Rose water 1 tsp
Take milk powder in a bowl, mix it with hot ghee and rose water. Mix all ingredients together and strain it to form mawa crumbles. Add the crumbles as a topping over gulab jamun.
