Ingredients:

For the Noodles:

  • 3 packs of noodles

  • 1 tsp salt (for boiling)

  • 1 tsp oil (to prevent stickiness)

For the Stir-Fry:

  • ½ cup shredded cabbage

  • ½ cup sliced onion

  • ¼ cup julienned carrot

  • ½ cup sliced capsicum

  • 3 cloves garlic, finely chopped

  • 1¼ tsp ginger, finely chopped

  • 2 green chilies, chopped

  • 3 tbsp oil (for stir-frying)

  • ¼ tsp salt

  • 1¼ tsp soy sauce

  • 1¼ tsp vinegar

  • 1 tbsp chili sauce

  • 1 tsp green chili sauce

  • ¼ tsp sugar

  • A big pinch of garam masala

For the Egg Scramble:

  • 2 eggs

  • A pinch of salt & pepper

For Garnish:

  • Green onions, chopped

  • Sliced red onion

  • ½ tsp lime juice





Instructions:

  1. Cook the Noodles:

    • In a large pan, bring water to a boil, add salt, and cook the noodles as per package instructions.

    • Drain and spread 1 tsp oil over them to prevent sticking. Fan it out to cool.

  2. Stir-Fry the Vegetables:

    • Heat a wok, add a splash of oil, and cook the julienned carrots for 1 minute.

    • Add chopped ginger, garlic, and green chilies. Sauté for 1½ minutes.

    • Toss in the cabbage, onion, and capsicum. Stir-fry for another 30 seconds.

    • Season with ¼ tsp salt and mix well.

  3. Add Noodles & Sauces:

    • Add the cooled noodles to the wok and mix everything well.

    • Pour in soy sauce, vinegar, chili sauce, and green chili sauce. Stir-fry on high heat to coat evenly.

    • Add sugar and a pinch of garam masala. Toss everything together.

  4. Scramble the Eggs:

    • In a separate pan, scramble 2 eggs with a pinch of salt and pepper.

    • Once done, pour the scrambled eggs over the noodles and mix well.

  5. Final Touch:

    • Garnish with chopped green onions, sliced red onion, and a squeeze of lime juice.

    • Serve hot and enjoy!
