How to Make Chicken Lollipop

For the Chicken Marinade

  • 14-16 chicken wings (drumettes and flats)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon ginger paste

  • 1 teaspoon garlic paste

  • 1 teaspoon soy sauce

  • 1 teaspoon Kashmiri red chili powder


For the Dry Batter

  • ¼ cup cornflour

  • ½ cup all-purpose flour

  • ½ teaspoon garlic powder

  • 1 ½ teaspoons Kashmiri red chili powder

  • ½ teaspoon salt

  • ½ cup water + 2 tablespoons (adjust as needed)


For the Sauce

  • 1 teaspoon chopped garlic

  • 1 tablespoon ketchup

  • 1 tablespoon Schezwan sauce

  • 1 teaspoon soy sauce


For Garnish

  • 1 tablespoon chopped green onions



Instructions

1. Prepare the Chicken Lollipops

  • To create the "lollipop" shape, push the meat upward on each wing piece, exposing the bone for easy handling.

  • In a bowl, mix the chicken with salt, pepper, ginger paste, garlic paste, soy sauce, and Kashmiri red chili powder.

  • Cover with plastic wrap and let it marinate for at least 15 minutes (or up to 1 hour for deeper flavor).

2. Coat and Fry the Chicken

  • In a separate bowl, combine cornflour, all-purpose flour, garlic powder, Kashmiri red chili powder, and salt. Gradually add water and mix until smooth.

  • Coat each marinated wing in the batter, ensuring an even layer.

  • Heat oil in a deep pan or wok to 350°F (175°C) and fry the wings for 8-10 minutes until golden brown and crispy. Drain on a paper towel.

3. Make the Sauce

  • In a separate pan, heat a tablespoon of oil over medium heat.

  • Sauté the chopped garlic until fragrant. Add ketchup, Schezwan sauce, and soy sauce, stirring well.

  • Toss the crispy chicken into the sauce, ensuring each piece is well coated.

4. Garnish and Serve

  • Sprinkle with chopped green onions and serve hot.
