Ingredients:
Dressing
¼ cup onion
1 ½ tbsp cider vinegar
2 tsp dijon mustard
Base
½ tsp pepper
½ tsp sugar
½ tsp salt
3 tbsp olive oil
2 cups lettuce
3 tbsp onion
2 small cucumbers
1 red bell pepper
1 green bell pepper
1 cup grilled chicken
1 tsp lime juice
Instructions:
1. Prepare salad dressing by blending a cup of onion with cider vinegar, and dijon mustard
2. Set salad base with pepper, sugar, salt, olive oil, lettuce, onion, cucumbers, bell peppers, and grilled chicken
3. Pour over the salad dressing
4. Toss until the salad base is coated in dressing
5. Finish off with a squeeze of lime
6. Ready to enjoy!
Ingredients:
Chicken
2 chicken breasts
1 cup water
¼ onion
2 garlic cloves
1 bay leaf
¾ tsp salt
2 ½ tbsp mayonnaise
2 tbsp mustard
1 lime
Base
2 cups lettuce
3 tbsp onion
½ tsp green chili
3 tbsp coriander
Instructions:
1. Place two pieces of chicken breast in a large pot
2. Pour a cup of water
3. Add the following for flavouring the chicken with onion, garlic cloves, and bay leaf
4. Salt to taste
5. Cover with lid and cook for 16 to 18 minutes
6. Remove the chicken from heat and shred
7. Place shredded chicken in a large clear bowl
8. Mix in mayonnaise and mustard
9. Squeeze of a lime
10. Salt and pepper to taste
11. Toss in lettuce, onion, green chili, and fresh coriander
12. Mix well and serve alone or on a tortilla as desired
13. Ready to enjoy!
