Guilt-Free Gourmet: 7-Layer Porota and Quick Onion Chutney!

Indulge in our Healthy 7-Layered Porota served with Instant Onion Chutney—a treat that’s as delicious as it is nutritious. Perfectly layered and seasoned, this porota offers a burst of flavors while keeping you guilt-free. Pair it with our zesty chutney for a meal that’s both yummy and healthy!





Ingredients:

For Porota:

  • 2 cups atta/whole wheat flour

  • ½ tsp salt

  • 1 tbsp cooking oil

  • 1 cup warm water (approx.)

  • Finely chopped garlic, coriander, red chili flakes

  • Nigella seeds/kalijeera

For Instant Onion Chutney:

  • 1 medium red onion, chopped

  • ¼ cup coriander

  • ¼ cup green onions

  • 1 tsp ginger, finely chopped

  • ¼ tsp salt

  • ¼ tsp black salt

  • ½ tsp red chili

  • 1 tsp roasted cumin

  • ¾ cup tamarind water

  • 1 small boiled potato, finely grated

  • 1½ tbsp gur/jaggery

  • 1-2 green chilies, finely chopped

  • Water to adjust consistency





Instructions:

For the Dough:

  1. Mix 2 cups of atta, ½ tsp salt, and 1 tbsp cooking oil in a bowl.

  2. Add approximately 1 cup of warm water.

  3. Knead into a smooth dough (4-5 minutes by hand).

  4. Cover with a damp cloth and rest for 10 minutes.

For the Chutney:

  1. In a separate bowl, combine all chutney ingredients and mix well. Adjust water for consistency. Set aside.

For Assembling and Cooking the Porota:

  1. Divide the rested dough into 4 equal portions. Roll each into a ball.

  2. Roll out one ball into a thin disk.

  3. Spread a bit of cooking oil and atta on the disk.

  4. Sprinkle chopped garlic, coriander, and red chili flakes. Tap to stick.

  5. Cut the disk into 4 portions, with one being larger.

  6. Overlap the smaller cuts and cover with the larger piece. Seal edges.

  7. Roll out thinly, sprinkle nigella seeds, and roll to stick.

  8. Fry in a hot pan, flipping once or twice, then add cooking oil.

  9. Cook over medium heat until done.
