Ingredients (Dal filling)
Masoor Dal 1/2 cup
Water 1 cup
Oil 1 tbsp
Salt to taste
Onion 1 sliced
Garlic 3 sliced
Green chilli 1 chopped
Turmeric powder 1/2 tsp
Red chilli powder 1/2 tsp
Black pepper 1/2 tsp
Roasted cumin powder 1/4 tsp
Chaat Masala 1/4 tsp
Panch phoron 1/4 tsp
Coriander leaves 1 tbsp
Directions
Heat oil in a pan at medium-high heat and add sliced onion, garlic, green chilli, turmeric and red chilli powder, water and salt to taste. Cover it with lid and let it cook for couple minutes, stirring occasionally. Once the water has reduced, add black pepper, roasted cumin powder, chaat masala and panch phoron, corainder leaves. Keep cooking until water is completed reduced, the filling should be dry.
Making of Dal Puri
Ingredients (dough)
White Flour 1.25 cup
Water 1/2 cup
Oil 2 tbsp
Salt to taste
Directions
In a bowl mix flour, salt and oil together. Add the water slowly, as required. Knead the dough lightly, dough should be firm and smooth. Cover with wet towel and let it rest for 15 mins.
Divide dough into small balls. Flatten one dough ball and place dal stuffing in center and seal it from all sides. Apply some oil onto surface and gently roll the dough ball into round disks, making sure the dal stuffing does not fall out.
Heat the oil in frying pan over medium heat frying pan, oil must be hot! To check if oil is ready drop a little piece of dough in the oil. Dough should sizzle, and come up slowly.
Fry one dal puri at a time. Slowly place the puri in the frying pan, slightly pressing on top so the puri puffs up. Allow one side to cook well and then flip it.
Drain excess oil in paper towels and repeat the process for remaining puri's.
Serve with tamarind sauce! Enjoy!
