A simple chicken curry recipe with papaya-and-carrot infused broth. One of the best chicken curry recipe you can ever have!
Ingredients
Green Papaya 250 grams
Chicken legs 750 grams
Carrots 250 grams
Oil 1/4 cup
Onion sliced 1 cup
Garlic paste 1 tsp
Ginger paste 1 tsp
Red chilli powder 1 tsp
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Raw cumin powder 1/2 tsp
Roasted cumin powder 1/2 tsp
Garam masala powder 1/2 tsp
Cinnamon 2 stick
Cloves 4 pcs
Bay leaves 2 pcs
Cardamom 4 pcs
Black peppercorns 8-10 pcs
Green chilli 4 pcs
Salt to taste
Preparation
Wash, peel and cut green papaya in small 2-inch size pieces.
Wash, peel and cut carrot in small pieces.
Wash and clean chicken pieces.
Directions
Heat oil in a pan over medium heat, add sliced onion and sauté until translucent. Add raw garam masala; black peppercorns, cardamom, cloves and bay leaves, along with chicken pieces. Stir and mix everything together with the spices. The caramelized onions will adds flavour into the chicken. Add red chilli powder, coriander powder, turmeric powder, raw cumin powder, garlic paste, ginger paste and salt to taste. Give everything a good mix and sauté over med-high heat for couple minutes. Add 1/2 cup water, close lid and cook for 5 mins over high heat (stir occasionally in between). Add green papaya, carrots and cook under closed lid again for 5 minutes, stirring occasionally. Add 1 1/2 cup water, reduce heat to medium flame and cook for 20 mins under closed lid.
Remove lid and check if the vegetables are cooked, if not, you can cook for another couple minutes. Add garam masala powder, roasted cumin powder, green chillies. Remove from heat.
Serve hot with steamed rice!
