Traditional Bangla flavourful mashed dishes served during special occasions

Ingredients:
Tomato Begun
1 eggplant
1 tsp cooking oil
2 medium tomatoes
½ cup red onion
3 roasted garlic
5 roasted green chilies
4 roasted red chilies
½ tsp salt
1 ½ tsp mustard oil
3 tbsp fresh coriander
Bhaja Macher Bhorta
5 white fish fillets
1 ½ tbsp lime juice
½ tsp salt
½ tsp red chili
¼ tsp turmeric
1 tsp cooking oil
5 garlic cloves
5-6 green chilies
7 roasted dry red chili
½ cup red onion
1 ½ tbsp mustard oil
3 tbsp fresh coriander
Musurir Dal Bhorta
1 cup soaked masoor dal
1 cup water
½ cup red onion
6 roasted red chilies
5 roasted garlic
8 roasted green chilies
½ tsp salt
1 ½ tbsp mustard oil
3 tbsp fresh coriander
Instructions for Tomato Begun Bhorta:
1. Peel the skin off the eggplant
2. Cut the eggplant into small thin pieces and transfer it to a pan
3. Cook the eggplant on dry heat
4. Drizzle cooking oil
5. Add a pinch of salt to taste
6. Cook the eggplant until soft
7. Remove the eggplant from heat
8. Drizzle cooking oil in pan
9. Add tomato chucks
10. Cover the tomatoes with a lid and cook until soft
11. Uncover and mash the tomatoes
12. Place thinly sliced onion on a large plate along with roasted garlic, green chilies and red chilies
13. Crush the garlic and chilies using your bare hand
14. Gently mix in the mashed chilies with the onion
15. Ensure to not touch your face with your hand
16. Mix in the cooked eggplant and tomato
17. Add salt to taste
18. Mix in mustard oil and fresh coriander before serving
19. Ready to enjoy!
Instructions for Bhaja Macher Bhorta:
1. Marinate the fish fillets with lime juice, salt to taste, red chili, and turmeric
2. Drizzle cooking oil in pan and add the fish fillets along with garlic cloves
3. Cook until fish until exterior is light brown in colour and form crisp
4. Place thinly sliced onion on a large plate along with roasted garlic, green chilies and red chilies
5. Crush the garlic and chilies using your bare hand
6. Gently mix in the mashed chilies with the onion
7. Ensure to not touch your face with your hand
8. Mix in the cooked fish
9. Add salt to taste
10. Mix in mustard oil and fresh coriander before serving
11. Ready to enjoy!
Instructions for Musurir Dal Bhorta:
1. Cook soaked masoor dal with the lid on until soft
2. Stir occasionally as needed
3. Transfer the cooked masoor dal to a flat plate and let it cool down
4. Place thinly sliced onion on a large plate along with roasted garlic, salt, green chilies and roasted dry red chilies
5. Crush the garlic and chilies using your bare hand
6. Gently mix in the mashed spices with the onion
7. Ensure to not touch your face with your hand
8. Mix in the masoor dal
9. Add salt to taste
10. Mix in mustard oil and fresh coriander before serving
11. Ready to enjoy!
