Ingredients:
1 ½ kg chicken pieces
1 tsp lime juice
1 tsp salt
3 tbsp mustard oil
1 ½ tbsp cooking oil
1 ½ tsp Bengali five spice
1 large onion
1 bay leaf
2 small cinnamon sticks
5 cardamom
7 cloves
1 tsp garlic paste
1 ½ tsp ginger paste
2 small tomatoes
½ tsp salt
1 tsp ground coriander
1 tsp red chili
½ tsp turmeric
1 tsp cumin
3 tbsp yogurt + 1 tsp sugar
5 garlic cloves
½ tsp garam masala
5 green chilies
Instructions:
1. Marinate chicken with salt and lime juice for 20 minutes
2. Drizzle cooking oil and mustard oil in a pan
3. Add five-spice, sliced onions and sauté until soft
4. Add bay leaf, cinnamon sticks, cardamom, cloves and fry for 1-2 minutes until fragrant
5. Add diced tomatoes, garlic, and ginger paste
6. Salt to taste, coriander, red chili, turmeric, and cumin
7. Sauté for 4-5 minutes
8. Add chicken pieces and fry for 6 minutes on high heat
9. Stir in the sugar yogurt mixture
10. Cook for 20 minutes on low heat with the lid on while occasionally stirring
11. Add garam masala and garlic cloves
12. Cook for another 15 minutes on low heat with the lid on
13. Garnish with fresh green chilies
