These simple Fried Eggplant and Saucy Eggplant recipes are all the comfort! These vegan eggplant dishes provide the perfect appetizing touch to a plain lunch meal!
Ingredients:
Fried Eggplant
3 eggplants
2 eggs
½ tsp salt
½ tsp pepper
½ cup breadcrumbs
Saucy Eggplant
2 ½ tbsp rice flour
½ tsp red chili
½ tsp turmeric
½ tsp salt
1 large sliced onion
1 cup cherry tomatoes
1 tsp salt
½ tsp coriander
½ tsp turmeric
½ tsp red chili
½ tsp garam masala
1 ½ tbsp tamarind
½ cup of water
½ tsp coriander
Instructions for fried eggplant:
1. Cut eggplants in half and thinly slice while slice remains intact to the tip
2. Sprinkle salt and let it sit for 15 minutes
3. Absorb the released water with a paper towel
4. Whisk egg with salt and pepper on a separate plate
5. Dip the eggplant in the whisked egg then coat it in breadcrumbs
6. Fry in oil until golden brown and serve while fresh and hot
7. Ready to Enjoy!
Instructions for saucy eggplant:
1. Cut eggplants in half and thinly slice while slice remains intact to the tip
2. Sprinkle salt and let it sit for 15 minutes
3. Mix rice with red chili, turmeric, salt, and a splash of water
4. Coat the eggplant with the mixture and fry in oil until light golden brown
5. Remove from heat and set aside
6. Using a pan, stir in sliced onions and sauté until brown
7. Add cherry tomatoes and salt
8. Stir in coriander, turmeric, red chili, garam masala, and a splash of water
9. Sauté for 5-6 minutes
10. Add tamarind and water
11. Transfer the eggplant to the saucepan and cook for 2-3 minutes
12. Garnish with fresh coriander before serving
